Because it does. Cut the leaf end off a carrot. You should see a dark circle inside the lighter orange circle. Carefully cut a slit down the length of the carrot, reaching only to the dark circle on not through it. You should be able to split the carrot with your fingers and leave the heart of the carrot intact.

Taste it in contrast with the outer skin, be amazed.
