Green is unripe, red is ripe, and the various colors in-between are just various stages of ripeness.

I can't understand why people prefer green to red bell peppers. With most hot pepper cultivars they eat them green because they want them less hot, fine, but bell peppers were designed to be sweet and unripe green bell peppers are far, far less nutritious than ripe bell peppers.

Last week I made a nice sandwich for lunch:

Roasted some red peppers and marinated them in a vinaigrette. On a fresh baguette I added (top-bottom) goat cheese, roasted pepper, black pepper, basil leaves, red onion, and some fried prosciutto.
