Never been here before, but was curious what you all thought of Alton Brown. Not really into cooking shows per se but Good Eats was really interesting and I've tried a lot of his recipes. Is he a decent guy?

Some kind of Christian. I've heard he's a douche in real life, but I loved his show, especially the tomato episode. The final season was pretty weak IMHO. I learned a lot about cooking by watching Good Eats. He was an ad guy before Good Eats so he could produce an entertaining show, make it funny. I don't like many (any?) shows on TV, so finding a cooking show that was funny, entertaining and informative all at once was really something. I mean, using puppets to demonstrate how yeast produce CO2 by belching and farting? Never saw Martha Stewart do that. I guess he burned out after a while. He lasted longer than others.

One of my all-time favorite TV characters was "W" who was apparently Alton Brown's chiropractor cast as a mean-spirited equipment expert. From a behind-the-scenes Good Eats special, she's as sweet as can be and nothing like her "W" character. I found the whole "W" character to be hilarious and I loved her open hostility towards his character.

When I first started coming here /ck/ seemed mostly very fond of him and urged me to watch his show, which i did. More recently people mostly seem to hate him for his questionable recipes and religious beliefs.

I really enjoyed the show but haven't followed a single recipe from it. When I first started cooking it was a good springboard type thing to direct my recipe hunting.

I venture most of "his" recipes are discovered and researched by his staff, who then select the best ones to pass on to him so he can then show it off to the viewer. Good eats is a great show. Very basic, explains the "why" of cooking, and doesn't feature the TV personality as the center of attention.

The only gripes I have are some of his actual recipes are spotty, and he goes into autistic "why the fuck would anyone do this" methodology sometimes (the deep fried turkey comes to mind). Kind of hypocritical to say eat raw eggs and ignore the FDA, then say stand 20 feet back with some fucked up contraption to dip a turkey into hot oil.

I saw him at a book review back at the time of his first year or two at the show. Even then he was kind of Mr. Ham for the audience, which incidentally was primarily film fans. They had the technical questions about cameras inside the oven, specifics about lighting, and so forth. They 100% monopolized the Q&A, and though he was flattered by the cult following, he was obviously disappointed it wasn't actually about his cooking, just the production of the show. Mac user, iirc, as well. You know how they were in the early 90s, mmhmm.

So, the next time I saw him was definitely a culinary crowd. He's a smart guy, thinks on his feet, gives great answers to questions, cracks jokes, and in no way would you think he's an idiot. I'm probably a better cook than he is...seeing all the flaws in his recipes and techniques. I think some of the criticism about the guy stems from the whole healthy food phase he had, which takes a launch from the flavor first purist kind of attitude he clearly had cooking the best recipes for each food. That know-it-all attitude got a bit schticky, and imho he stopped putting max effort into the segments. It lost some charm. But, it was still solid. I personally stopped liking him much when he went bowtie, and got the old money round frame horn rims, but that's just me. When he combined that with the crash diet thinness in his face, I thought, hrm, AIDS? Gay? And, just why won't he remove that mole? He wasn't charming anymore, just fast talking and scary. He was a poor choice to do Iron Chef narration.

I don't know of any history. But, to be fair, Giada is a hack. She's the most inept appearing cook in all her episodes. She can't lift a simple wooden spoon without it looking like she's holding a 20lb barbell awkwardly about to drop it. She may have a little private chef, and event work with her time working for Wolfgang, but she's not intuitive, talented or amazing. That's my guess. I doubt she's ever been rude to him and vice versa. She's considered a very nice person privately, and she's from a classier background than Alton.

Alton has appeared a grumpy shit for a few years now. These episodes of holiday get togethers have always appeared strained, ill timed and kind of hard to watch. I'm surprised you didn't notice the Bobby Flay friction most of all. He's really the only true ADHD ass at the Food Network who speaks before thinking. They used to have Jacqui Malouf to kind of run interference during that one talk show, because he was so hostile to questions from his little family room crowd. Whereas, you watch any Mario episode cooking for those "friends" and never see any weird reaction to what he was doing or what a recipe means. Big difference in personality. Bobby isn't even nice to his two brain trust assistants helping him all these years.

He never seemed like a bad guy to me in person and I've had several lengthy interactions with him (he had dinner a the bar several times). Well, I loved that episode. There is a shortage of common sense regarding the booming tradition of involving the man in the Thanksgiving prep by something to do outside with a ton of beer and goofing off. It's no different than a BBQ desire. At least his contraption showed just the distance needed for safety, to snap some sense into the idiots who love that fried goodness. Myself, I think it resembles KFC too much, and the only thing about it tasty is whatever was injected. It cooks too fast for bones to flavor the meat that well. To each their own.

I used to think that way too. I don't own one, but I would under certain circumstances. I don't think it's any different than owning a Mr. Coffee with a timer that goes off at the same time as your alarm clock. If you need to keep rice warm over a couple of hours, as your family staggers home, awesome. If you make rice daily, or if you want to keep a burner free for your other pots and pans, or you simply want to leave the house, put the rice on, grab some groceries, and have your brown rice at least halfway done, etc. Do I think everyone needs one? Or should have one of every appliance? Hell no. But, there's no reason to hate them. I do own a $8 microwave pressure cooker, because that's how my cuban friends do it, and I think it's the fluffiest most delicious rice everytime they make it. It was only $8 and doesn't take up anymore cupboard space than a bowl.

Probably because I have both a rice cooker, and a toaster.

My toaster is a 4 slice that cost about $50.
My rice cooker is a Durabrand 4 cup that cost $9.97CAD brand new. Have had both over 7 years so far. Both very handy.

Cooking rice on a range can be a bitch if you have a ridiculous sized wok going too, uses one less pot, and is set and forget for rice all day if need be. For under $1.50 a year investment each year so far... That's a pretty good deal for convenience.

And toasters kick ass for effortless consistency.
