You can get smoked great lakes whitefish in many stores on the east coast. Walleye and perch are a bit more rare but as a former midwest resident, you're not missing much. I mean don't get me wrong they are good but it's much nicer to have literally an ocean of fish available, than the 3 fish you get in the upper midwest.

All the popular oceanic food fishes are flash frozen at sea and shipped to the furthest reaches of Oklahoma (etc), but you simply can't get freshwater game fish 'round here without fishing, and even then they're only in a few stocked lakes. Gotta have a boat. And skill.

This is the best crab, according to anyone who is right. They live around here.

They are generally steamed shortly after being caught and sold whole. The proper method of preparing them is to open the butcher paper the fishmonger wrapped them in and tear them apart over the kitchen sink with your bare hands, stuffing your face as you go. Condiments are for lesser crabs.

Anon might know this, but caguamanta was origionaly caguama, or sea turtle stew. There were taco stands everywhere selling it, as a breakfast food strangely enough.
Once outlawed everyone switched over to using manta ray as a substitute, but instead of calling it just "manta" they call it caguamanta, which means loosley " ray sea turtle style ".

I made Cioppino for Christmas Eve this year, everyone was cumming buckets. Definitely will do again. When the extra mile (since it was a special occasion) and topped the bowls with half a grilled lobster. That's was just....orgasmic. Wouldn't spend that much on a regular basis, though. Clams, mussels, shrimp, fish, and Dungeness crab are plenty enough.

They taste like the ocean, in a nice and sweet way. Not as harsh as oysters (which are much more ocean flavoured) and have that nice soft chewy texture that almost melts in your mouth if cooked correctly.
