Shred cabbage, salt it and set it into a plastic bag with all the air squeezed out. Leave it there until the salt leeches enough of the cabbage's liquid that the shreds are completely (or nearly so) submerged.
Drain. Rinse. Wash. Drain. Squeeze out excess liquid then toss with caraway and shredded onion.
Add an egg and just enough flour to make a very thick batter and fry cabbage pancakes in batches.
I don't know what these cabbage pancake things are called, but they're delicious. Pairs well with roasted duck or pork.
Also good: do as before up to the part where you squeeze the shreds of excess moisture.
Toss with cooked cellophane noodles, rehydrated baby prawns, ginger, red-cooked pork and a bit of fish, soy and oyster sauces to taste. Maybe a little sugar and/or salt, too. Also an egg, to hold it all together. Use as a filling for dumplings or fry rolls.
In southern Italy, cabbage risotto with parmigiano is a common food.
