There's an American curry called Country Captain. I make mine with chicken thighs, curry powder, roux and tomato juice, along with a few vegetables and slivered almonds. It's quite good.
Another thing I cook with tomato juice is gumbo. I add a bit for colour.
Tomato juice is a good swap out for water when cooking rice or, alternately, when making fried rice, adding it instead of chicken stock.
I simmer pork-and-pickled-cucumber-stuffed cabbage leaves in a mixture of tomato juice and vinegar that I flavour with pork stock powder and thicken with roux.
I've got lots of other uses for it, too. I buy a large tin whenever it's on offer then freeze it in ice trays to store for future use. I add a cube of tomato juice to homemade ham gravy. The gravy is great on ham puddings (like yorkshire puddings... only made with ham drippings rather than beef) besides being fantastic on the ham itself.
I also like to make tomato jelly. Not quite the sort of thing you're thinking of, I'm sure, but something like cranberry sauce... only tomato. I use tiny tomatoes, tomato juice and a sprinkle of agar or gelatine to make it. Spritzed with a little lemon, it's got some tartness that I quite enjoy on roast duck, the acidity cutting the richness of the duck meat and working together quite well.
Oddly, the one thing I don't use it for is tomato soup. My tomato soup is a bit heartier, a 1:1 mixture of homemade tomato sauce and broth or stock of some sort (vegetable broth or chicken stock, most commonly).
