Have I been rused? I covered it in olive oil and rubbed in salt, pepper, and cayenne and it made a nice salty/peppery oil, pan was preheated and I seared it a couple minutes on each side. Before eating I squeezed a lemon in and it got all the sticky bits off, added more olive oil to the lemon juice and dumped on the fish.

How is this not "good for my fish"?

You can also see the albumin (the white stuff) seeping out of the sides, which is a sure sign that you overcooked it. It also looks shriveled and beat up.

damn it that blew my mind... i never connected the two.

But i eat raw salmon all day every day at the sushi bar... and I salt cure my own wild-caught salmon right in the fridge .... throw some salt on it and wait 3 days and eat it raw.

And i've made my own sushi at home but it tasted like shit. Still didn't make me sick.

I've been leaving food on the counter overnight my whole life and never once got sick. You guys should listen to more lobby-funded FDA health alerts and always throw away everything once it expires.... *rolleyes*

i got mayo like 2 years past expiry right now and i use sour milk to make crepes all the time.

Haha that's the opposite of what you actually should do. See when you get it sushi-grade from a reputable fihs monger, they flash-freeze it on the boat killing all parasites and at the same time not creating the large ice crystals that slow freezing in the freezer create (destroying the fish).

But WILD salmon in alaska is almost certainly going to have parasites. It has to be frozen first.

100% of all raw salmon in america is previously frozen. It's required to be so. Even at suhsi places.
