Gonna start with an 8lb(3.6kg m8) pork shoulder. Cost around 15USD

It is nasty as fuck to handle and very difficult to cut. Gonna be worth it though.

Cut that bad larry into cubes. Throw enough pork into large pot to cover the bottom and cover with salted water. Bring to a boil and let simmer for 90 minutes.

Made a few batches of black beans yesterday, that's why the pot is black like that. Anyway more pics to come.

np. If you can, try resetting the white balance on your camera to get rid of that blue tone... it's easy enough to fix in Photoshop, but would be even easier for you to fix in camera. And would make your pictures look tastier :-)

Welp, idk if it worked but I tried. Either I'm incredibly inept or my camera is a POS.

So the water is supposed to boil away from the pork, pulling the fat out. It wasn't boiling away fast enough for my liking but it's almost all gone now.

The only time Ive ever seen pork shoulder boiled without being browned was when it was drenched in sauce, and even then it would have been better browned.

Now that all of that amazing fat had been rendered, we use it to brown the pork pieces on all sides. I threw a few extra fatty pieces in there for good measure.

About to assemble the rest of the ingredients.

I never specified beaner pulled pork. I clarified I misspoke on the pulled pork. Sometimes it's shredded, but wikipedia should have told you that. Anyway the region of the dish was never mentioned but the flavors are all there. Garlic, salt, onion, in the salsa. Lime juice from wedge in last picture. There's more than one way to make a dish. Wikipedia doesn't know everything. Cumin and oregano in bean salad. BTW it is a recipe from the Julia Child of mexican cuisine, and it's bretty damn good.
