Not 100% on the rules here, never been on this board before. Not sure if I can ask for recipes or not.

Is there a /ck/ approved key lime pie recipe? Don't care for the ones google turns up. And I trust 4chan more than a 40 something single mother that can't tolerate gluten or some shit.

Key Lime Pie
Crust;
3/4 cup crushed graham cracker crumbs
3 tablespoons melted butter
1/4 teaspoon cinnamon
2 tablespoons white sugar
Filling;
2 (12 ounce) cans sweetened condensed milk
1/2 cup sour cream
1 cup key lime juice
1 tablespoon lime zest
Preheat oven to 350F.
In a medium bowl, mix graham cracker crumbs, butter, cinnamon and sugar. Press onto bottom of pie pan. Bake for 7 minutes or chill for 1 hour.
In a medium bowl, combine condensed milk, sour cream, lime juice, and lime rind. Mix well and pour into graham cracker crust.
Bake 5 to 8 minutes, until tiny pinhole bubbles burst on the surface of pie. Do not brown. Chill overnight. Garnish with whipped cream if desired.

I made one last weekend...
However, I made mine with fresh calamondin juice, which is just as tart as key lime, just that nuance of oranges.

The traditional key west pie is 1) graham cracker cookie crust 2) raw eggs 3) no meringue topping 4) nicely tart.

I can buy key limes where I live in a good 5lb bag. You'll use about half if they are ripe and juicy, all of it, if not. If you can only get Nellie's bottled juice, it'll be fine, but I would add the zest of one fresh persian lime, and juice it in there too.

Combine one ream, which is a perfect sectioned 1/3rd a box of graham crackers, about 8 sheets, I think, crushed, with half a stick of melted butter, and 2 Tbsp of sugar right in the pie plate. Bake in preheated oven about 8 minutes to recrisp and set the sugar matrix!

1/4 cup juice
1 can of sweetened condensed milk (though actually 3 cans makes two deep dish pies perfectly)
Incorporate, using as much zest as you wish. I add a good 3 Tbsp, cause I like it like that, pulpy juice too. Stir in 3 egg yolks per pie. Now this is the sticky part....you can decide to bake your filling in the cooled shell or let it be raw. I've even bought the pasteurized eggs to leave it raw. However, there is little change to the delicious juice when you bake it a simple 10 minutes. Cool to the touch, and then freeze the tightly covered pie at least 3 hours. Enjoy.

If you don't have a flexible cookie spatula style pie server? And, this is for a party? Consider using your springform, or ensuring the pie is definitely good and frozen before slicing.

There is such a thing as graham flour, which to me is like whole wheat mixed with wheat germ, along with that touch of honey flavor.


It's most similar to the british digestive. There's a little bit of sweetness which has that grainy nuttiness from wheat germ.

Depending where you live, you can also substitute the Maria cracker, that latin cookie that is about $1 a tube. It's also the same texture and sweetness, though without the honey flavor. If using these, use brown sugar in your crust to bring back that flavor.
