So an american here who really wants to eat poutine.

Any general tips to make it? I know its a simple thing but I want to get it right and not just get a gooey mess.

Also is there any premade gravy I can buy so I don't have to make my own?

Canadian here.
I've only had poutine from 3 different places, 2 using curds, one that puts grated cheese on the fries and melts it with the gravy, and the latter is by far the best I've had, so I don't understand why everyone talking about poutine ever demands that curds be used.
That being said, definitely try the dish with curds, it's substantially different and the 'official' way to do it, IIRC. But don't be afraid to give regular cheese a go, either.

Do you want a "traditional" poutine? There are a lot of variations, some that do not use gravy (Poutine Italienne being the most common. It uses a tomato sauce with ground meat instead).

There was a restaurant on St-Denis in Montreal, Zero8, that due to being an allergen-free restaurant used duck fat instead of cheese curds. Fucking delicious. Unfortunately, they had to shut down because the entire latin quarter has become crazy expensive.
