I do a mexican style Italian sauce eggs

4 eggs
a splash of milk
2 spoon fulls of salsa
mix well
put in hot cast iron pan
add mexican cheese towards the end
serve

Surprised nobody has mentioned diced tomatoes.

Brown some diced onions and ham/bacon then add egg mixture with diced tomatoes and a dash of milk. Sprinkle with chives, serve with buttered, boiled potatoes. the tomatoes keep the dish wonderfully moist.
