I don't really see the problem here.

Plastic is a significantly less conductive material than stainless steel, so it should keep the heat/cold in for longer than old thermoses. Unless i'm missing something, plastic seems best.

You are missing something. A proper thermos is a vacuum flask. Pic related. Instead of insulation between the inside and outside it contains a vacuum. Plastic is not strong enough for that. So, if your "thermos" is made of plastic that means it's not a vacuum flask, rather it's just insulated the traditional style. A proper thermos is made of either stainless or glass, as another poster mentioned above. The glass ones are silvered on the inside to reduce heat loss via radiation, which makes them even better than stainless, though they are more fragile.

Well plastic is also supposed to retain flavors and scents, so if you used it mainly for coffee and switched over to another liquid in theory there might be traces of coffee flavor in your new liquid.
