We just picked up a smoked stilton at the restaurant called moody blue.

One of the things I love about blue cheese is that the flavor lingers so long in your mouth, and is so intense, that I tend to eat less of it. And any time I can enjoy delicious flavor without eating a whole pound of cheese in one sitting is a victory for me.

Also blue cheese makes salads, sauces, and burgers taste exponentially better.
