Out of all of the root vegetables I've eaten, parsnips are the most superior. My only issue with them is that I'm not all too familiar with its versatility other than roasted, butter poaching, and using it as a sweetener and thickener for purees. Anybody know any neat and unique ways to prepare the parsnip? Or any root vegetable for that matter?
