Mussels in bacon and wine sauce.

crisp up some bacon in a saute pan, add shallots, garlic, red pepper flakes, S+P and brown.

When garlic has browned drop a big handful of mussels in the pan, crank the heat on high, and add white wine. This will flame up. After the alcohol burns off cover and steam mussels until open. Serve in a bowl and serve with bread.

There have been some tragic accidents from saganaki and other flaming foods. It's may be a small risk with a cautious waitperson, but as you note, there are "idiot waiters" in the industry too. The worst accidents often involve management decisions to use higher proof alcohols to burn, which burn hotter and faster.
