I'm sipping on merlot and all of a sudden I taste french toast with maple syrup.

I haven't eaten that in at least a decade but the flavor came on full bore.

shitty California wines (read: most California wines) are usually blasted with oak to cover up the shit taste. there are other techniques too but the oak gives a vanilla smell which may be what you're experiencing.
