alternately i was thinking of trying to get a job as a linecook. that should teach me how to cook, yes? i have serving experience for a catering company in sf and it is the banquet season

Am I the only one that cooks kind of slowly?

It seems to me like I take a lot longer to make my meals, but no one has ever complained about the time I take or the product I make.

Whenever I go faster, I always seem to fuck it up/it comes out not as good.

I've always used my hands to basically tear apart and deseed peppers. Always seemed easier to me.

I used to feel that way but then my only real sense of measure for cooking is what I see on TV so I always felt slow in comparison. I realized how dumb it is to feel slow compared to people that basically have everything done for them in advance/edited for time so now I don't care as long as it come out right.

no you're not the only one
most people don't prep, which is why everything takes such a long-ass time
put things in order in your head first
then prepare ALL the ingredients you will need
then start putting heat in them
if you do it assembly-line style, it is faster, even if you're just one person
