kimchi, mayo, and sriracha. there is a place near me called Dirty Franks that has some killer, topping combos, such as the Seoul dog, above. another favorite is the Tot-cho, which is tater tots, jalapenos, and cheese sauce. that being said, i do enjoy a nice coney dog with sauce, onions, mustard, and cheese.

There is ZERO agreement across the country on what's good/better/best as a topping for a dog, just the same as there is on what kind of sausage to use, to boil or fry that puppy, and whether to toast or steam the bun....

Kosher hot dog to probably avoid rats and cow anuses, fried in a pan with a little sesame oil if I feel fancy. I steam the bun in a wet paper towel in the microwave while I do that, because it's easy and if you're frightened of microwaves I don't really know what to do with you.

Toppings are whatever looks nice in the fridge. Combinations get weird pretty fast, but it is for me. Not you.
