Because variety is the spice of life.

There are some very nice lettuce cultivars.

I like spinach in my salads and sandwiches, too.

I don't know man, it just seems like lettuce doesn't really offer anything other than texture, which Kale can offer + multitudes of vitamins and antioxidents.

I feel you on spinach though. That is another go-to for me.

I eat lots of spinach and genuinely wonder why people eat lettuce, then it occurred to me that lettuce has that nice crunch to it people love. I think it's probably mostly a textural thing.

Homemade kale chips are pretty God Damn Incredible.

But I like to get a lot of different leafy greens whenever I can. slow cooked collard or mustard greens, rocket, cabbage - including the Asian varieties like bok choy and napa - hell, even carrot greens can be great.

Why not go for them all?

And you should try kale. You should try almost everything when it comes to food. I don't mind at all when people say they don't like something because they've had it before. But if they won't try something they've never tried because they think they won't like it...well, that's unforgiveable.

i buy a few bunches of kale for $1 each every saturday at a farmers market. I also stock up on $1 a lb fruits and use everything to make smoothies for the whole week.
