I am secret ingredient guy from above, I use msg to cut down on the amount of salt I use while still having the full flavor enhancement of the full amount of salt. I think of msg the same way I do for artificial sweeteners - not bad for you on occasion but the accumulation of eating it everyday for awhile makes it bad. Its probably actually healthier because you end up eating much less salt.

It's just a shortcut compared to using proper seasonings, like using garlic powder instead of fresh, bullion cubes instead of homemade stock, gravy mix in a packet instead of making it from drippings, etc.

there is no spice that can replace salt, adding a bunch of seasoning will just over-complicate the flavors not bring them out like salt or msg can.

nothing unfounded about it. MSG is just glutamate; it's one of many flavors found in natural seasonings. Using MSG alone is taking that one flavor and throwing away the rest of it.

I didn't say there was anything wrong with that, obviously diffeent people have different priories. If you don't have time to simmer bones for hours to make stock then you have little choice but to take the shortcut of using bullion cubes. If you don't have access to other sources of glutamates then you take the shortcut of using MSG. I never said it was bad, but if your palate cannot tell the difference between the two then I'm not sure what to say.

Drying process. Meat is mostly water. When you dehydrate it to make jerky you lose a tremendous amount of the water weight--it takes multiple pounds of beef to make one pound of jerky, so even if you use cheap beef the price adds up quickly.
