I'm about to bake some bread on a pizza stone in my oven.

Usually when I bake bread I mist it with water a couple of times to get a good crust.

If I get moisture on the hot pizza stone in the oven.... will the stone explode?

Maybe if you submerged it in water, sure. Otherwise, the water probably won't even touch the stone before evaporating. It might even dance on it a bit.

Uh, no, just put the pan with water in there when you start heating oven and stone, it's useless if you put your bread in there and there's no steam yet and it takes time to get that water boiling

That's why you have an entire pan of water that's already streaming and will refill the stove in a matter of a minute or two, but you probably didn't stop to consider that

No, the stone will be fine. Explosions and cracks in stone are due to moisture being inside the stone when the stone is cold. When you heat it up the moisture inside expands and turns to steam which can cause problems depending on a number of factors.

Simply misting a little water on the outside won't harm the stone. Just don't drop it in a bucket of cold water.

the stone ins't really an issue.... I make better bread with the stone. The issue was the addition of water.

How do you keep pizza stones clean?
I imagine they get pretty dirty rather quickly. Are they dishwasher safe, or do you just do them with your regular dishes, or is there a special thing you gotta do to them?

No. Don't submerge them or put them in a dishwasher.. Just give them a light scrub and quick rinse if you must clean them. Normally, they season like most stoneware and only need a wipe down or a baking and a wipe down. You can use salt and a dry rag to scrub them to get stuck stuff off. Adding moisture to a cold stone is a no-no.

Preheat a cast iron pan in the bottom of the oven. Boil 1-2 cups of water in a pot on the stove. As soon as you put the bread on the stone, place the 1-2 cups of water in the preheated cast iron pan, and shut the door quickly. Be careful of steam burns, they're a bitch. You'll generate 20-30 seconds of steam, which is pretty comparable to commercial steam injection ovens which often have a 30 second steam cycle.

Never wash a stone. Most anything that gets on the stone during normal use will burn off after a few oven cycles. The only way to safely clean a stone is to wipe it down with a dry rag.

Mine doesn't really get dirty and the only maintenance I do is brush it with olive oil throughout every other month or so.
