Meh. I've had Sicilian pizza and while it was good, it wasn't the best. Neapolitan pizza is much better. (I've had pizza in many places, and the best US pizza does fine compared with Sicilian. But that place in Naples was ultimate god of the universe tier. Cheap too.)

I think it's because it's basically a science, unlike most other restaurants where you have to pay more attention. The pizza cooks _ long. I wouldn't be surprised if a lot of places have quantities of ingredients already divied out.

I know we've all seen the who dough flying around thing on food network but 95/100 that's being prepared for someone 4 hours from when you ordered.

Also, the standards have changed. You could watch someone make something entirely from scratch and basically going as fast as humanly possible and still bitch.

In the food industry, both the managers and customers have made quality and efficiency opposites.

No tomato sauce either (the culinary geniuses in italy thought tomatos were poisonous until surprisingly recent time, so it never caught on. It would be more like cheap oil flavored with fermented fish (like the oil from the tuna can, but after it has started to turn). Truth is, pizza was and always will be equivalent to the west's beans, rice, and ramen. Cheap, simple food for peasants.

Very true. The fire aspect was purely to get the temperature up. The smoke originates a few inches higher and typically many inches away from the pizza. You will get the same result regardless of how you heat the slate.

Tandoori is a little different. Same concept, but more exposure to the oven fuel. Not sure it makes a difference, but them naans and kebobs sure do taste good.

Yes, and it has evolved beyond that into a culinary art of it's own. Is it complicated art, or really tastebud-tittilating art? No, not at all, but the amount of ways you can create a tasty pizza with both cheap and expensive components makes it quite unique.

Is it "peasant food"? Very much so, but a lot of italians take pride in their by doing it in the old ways. And, no, they're not "like biscuits" considering their doughs are prepared and made entirely differently. If anything, it's closer to making food-bread than anything.
