Squash, /ck/. SQUASH!

Winter in particular. Buttercup to be exact. I love it. But it can be so hit and miss sometimes. One will be sweet rich and starchy and the next will have the consistency and bland flavor boiled mashed carrots.

What the secret to picking a good one?

I've heard that picking ones with dull skin and stems still attached tends to work well. Any other tips?

It sounds stupid, but I pat them with my hand, flick it with a finger, in addition to visual clues, like you already stated.

You get a feel for the ripeness, but it's subtle. It should have some reverberation and not feel as solid as a granite block.
