Aside of batter, waffles are crunchier because more surface area is contacting the heating element, leading to a great ratio of crispy crust to fluffy interior than a pancake.

Waffles use a method similar to a chiffon cake in which eggs are separated and a yolk/flour/milk/sugar/seasoning is incorporated with a whipped egg white to provide an airier texture and, yes, increase maillarded surface area with the waffle iron.

Pancakes are simply sweetened quickbreads, a sweet version of an english muffin with a chemical rather than biological leavening agent

I've made /fit/ pancakes a bunch (pic related) and I just came across a recipe for /fit/ waffles (pic to follow) ...
the waffles seem like they'd be much more dry ...

/fit/ pancakes:
1/2c oats
1c cottage cheese
4 eggs
1t vanilla extract

/fit/ waffles
1/2c oats
1 scoop whey
1/2c cottage cheese
1/2c egg whites
1t baking powder
dash salt
1T sweetener

I think I might make a half-batch of both tomorrow morning, do a side-by-side comparison.

But wondering if any /ck/ooks had some insight into the different ingredient combos.

No, it does that to decrease the calorie content while retaining the proteinaceous qualities of egg whites.
The recipe could be improved texturally by beating the egg whites to soft peak (or hard peak if you really want the foam structure), but as is it is simply a calorie consideration

Also, add some cinnamon and some sweetener to it. Cocoa powder would also work. Just things that add some cheap, zero calorie flavor to make the textural nightmare that is /fit/ recipes more bearable

If I have to make them PANCAKES every time, I know how to make them awesome, I do a variety of fillings, everyone can be happy, my griddle takes 10 seconds to clean

Waffle irons are a bitch in my asshole. a pain to clean, a pain to figure out exactly how much batter will make a full waffle without GOOP spilling over every side, and I don't know how to make soft yet crispy glorious belgian waffles like I had in Europe so FUCK IT.

That said, I LOVE me some eggo PB&Js

As I said earlier, I've made the pancakes a lot, and yep, they're still good.
The waffles made quite a good showing! I enjoyed them a lot.
Yes they were a bit drier, but some of that dryness was offset by the "airiness" of the puffed-up waffle texture.

So yep, I'd make 'em again.

Probably stick with the pancakes more just since it takes a pan not an appliance, but busting out the waffle maker is definitely a viable option with this recipe.
