Don't usually eat baked potatoes, but I love some baked Yams with a bit of salt, some butter and a ton of pepper. Would probably do the same just with some plain yogurt / cream on the potato instead of butter.

I have a method to my baked potatoes that I have perfected over the years, to where it is simple and delicious.

Thinly coat potato(es) in olive oil, cover with kosher salt, black pepper, and garlic powder. Bake at 390F degrees until done, at least 1.5 hours, turn off the oven, and let it cool-down in the oven after for another half hour. Two hours rough total cooking time. Take potatoes out of oven, place on a surface, stab with a fork down the center of the potato lengthwise in a straight line, and then push both ends of the potato together fast. This will mash the majority of the potato inside while keeping the exterior skin together.

As for condiments

>sour cream
>sharp cheddar
>crumbled bacon
>more black pepper
>thinly sliced green onions

I've never tried it with chili or onions, so that is food for thought. I HAVE had a 9" baked potato with bbq pork on top, along with other ingredients. That was pretty good. Courtesy of Fat Man's.
