Picked this up for dinner.
I'm not used to thick cuts (its about 1.1-1.2 inches thick) so I was wondering on what temp/time i should cook it? (Planning to just cook in pan with pepper/garlic/salt.)

Also, Just gonna eat it with mashed potatoes but also alternative meal ideas are welcome to be heard, my kitchen is pretty well stocked.

TL:DR How do I cook in pan.

Pound/grate garlic into a paste; stir in peppercorn and set aside.
Salt one side of the chops.
Heat a pan over medium-high/high heat, but not at full blast, and oil it lightly.
Place chops salted-side down into the pan then crank up to high for 1 minute.
>Lower the heat to medium/medium low and let the chops sit for 4-5 minutes or so.
>Crank the heat back to medium-high/high (but again not at full blast) and cook another minute. Salt the uncooked side and flip the chops.
Crank the heat to full blast, rub about half of the garlic paste onto the cooked side and cook 30 seconds then repeat green text above.
Flip out onto serving plate so un-garlicked side is up, and rub the remaining garlic paste on top.
Allow chops to rest, covered, 4-5 minutes, then serve.
