Hello /ck/
/sp/ here, my fiance has asked that I design a menu for our wedding (former apprenticed chef) I haven't worked in the business for about 9 years and I wanted to see what you all thought about this draft. The theme is southern style comfort food... im thinking of the whole menu being amuse's
>apps
-maryland crabcakes with sweet chili remoulade topped with arugala
-chavre, spinach and mushroom stuffed bacon wrapped pork tenderloin roulade with a chantrelle and black truffle demi glace
>sides
-lobster infused mac & cheese
-sweet potato fries w/ white truffle oil (served in these minature steel fry baskets)
>main
-my dads famous fried chicken (served in minature steel bucket)
- salt and pepper catfish on a potato blini with a red pepper chutney
- my famous carolina chopped pork bbq sliders
>desert
-pecan pie with a blue cheese ice cream
-bread pudding w/ a whiskey cream sauce
-apple crumble w/ vanilla sorbet and maple rhubarb sauce

any ideas?? i need some vegetable ideas for sides

I understand that you're going for comfort food, and chicken, fish, and bbq are good for that, but you probably should include a vegetarian option.
And it's already been said, but some of that sounds really over the top. If people really expect you to "chef it up" for your OWN wedding, they need to realize that it's about you getting married more than anything else. They don't need to be impressed, they're supposed to be there to celebrate YOUR big day.

yeah i definitely need some vegetarian options, I have quite a few friends that are vegetarian.
what I don't want is to have a nice well thought out menu with the vegetarian option to be very plain which unfortunately is the case in a lot of restaurants.
However, veg food is not my strong point anyone who has suggestions please feel free

Actual feedback:
The stuffed, bacon wrapped, truffle glazed pork tenderloin sounds a bit much for an appetizer, but everything else sounds good, and not too "pretentious".

For veggie sides, maybe something like collard/turnip greens, or some sort of fancy cole slaw. I'm vegetarian myself but I'm having a hard time thinking of a main dish. Maybe a veggie jambalaya.

Not an app. Maybe change it to a stuffed mushroom. Also it's a non-meat choice.

Overall, it's not quite southern...more comfort. Maple? Apple? Lobster? Blini?

I've been to a lot of nice weddings. Unless this is a small foodie family you know well? You need to make sure you have at least a good enough option for the lactose intolerant, vegan and a shellfish-free or gluten-free. Consider a no carb eater too, but diabetics are happy with fruit/cheese. At your wedding, you care about everyone. Think about balancing that, or adding southern veggies and a salad.
I also see too much short order frying...tough for a banquet, making fried okra hard. You can keep fried green tomatoes in an oven though.

Crabcakes are simplicity itself. As long as your friends recipe doesn't call for a lot of extra filler shit it's fine.

you can stealth-stretch real crab by adding krab, which on it's own is obviously not crab, but hard to spot when mixed with the real thing

other guy was a douche, and lobster mac is great but CRAWfish is a better plan. It goes with the theme better and the meat will be an appropriate size. Consider using Louisiana crab boil seasings. Also, consider some nice Oyster-raw or rockefeller. The absinthe in the rockefeller might be a nie flavor change for the menu? (source: I was a cook in south).
