Hey, /ck/. I have 3lbs of ground deer (venison sausage). I was planning on doing a spaghetti with a bolognese/vodka style sauce. Mix in the deer with red sauce, make an Alfredo in, add to pasta, done.

Anyone have a better idea?

I would try to avoid complicating the flavor so much- you really want to let the flavor of the meat shine, and it's similar enough to beef that the small distinctions are what matter. Just a bolognese might be fine, but maybe go even simpler if you can think of something that'll work within your constraints. Maybe make a nice pizza or two, possibly some stuffed peppers, or you could even just saute it with some vegetables and serve with some kind of starch. Or add some fat somehow and make burgers, or go for a meatloaf, depending on how comfortable you are with those options.

I have no idea why OP wants to combine venison with bolognese and alfredo. Why not throw everything else in the kitchen in there while you're at it?

Venison has a great taste on its own. I wouldn't add it to a strongly flavored sauce, that's just a waste.
