some pork addition (bacon, hocks, sausage, ham, salt pork, whatever)
peppers to your taste & hotness desire
apple
onion or maybe garlic
stock
maybe some dried / fresh / canned tomatoes
maybe some sweetener like brown sugar or molasses
maybe some mustard
(these last three will entirely change the flavour, so try all without these for the first batch, try a second with them, then decide where to have each)

No kidding. There's nothing worse than well-done pork; it's like chewing on old leather.

Anyway, since this is a slow cooker thread, here's a protip: make sure you brown your meat before adding the liquid & starting the slow cooking process. If your slow cooker has a removable "pot" then you can brown the meat in the pot on the stove, then move it to the slow cooker. That way the fond is in there with the rest of the ingredients. If your slow cooker doesn't have a removable pot then just use a normal pan on the stove.

Slow cooker's great for big hunks of meat. Pot roasts and pork roasts are my favorites. I like to do BBQ's, where you shred the meat afterwards. I've made carnitas in my slow cooker, and char sui. Both just need a little blast under the broiler to crisp them up a bit.
