anybody own a pressure cooker?

i love braising beef and pork but i work unusual hours so a lot of the time i don't have three hours to braise stuff.

is a pressure cooker the proper way to solve this problem?

yep, I braise chuck in pressure cooker all the fuckin time. sear the meat, saute onions carrots celery in the rendered fat, deglaze with broth, place meat back in, add broth halfway covering the meat. 50 minutes full pressure should be enough for a big hunk of meat but it will depend on size. When its cooked, remove the meat, skim the fat, add potatoes big carrots mushrooms WHATEVER into the cooking liquid and simmer until vegs are cooked

I have one. It's perfect for stock, but I don't particularly like it for actual food. The cook time is so fast it's very easy to either overcook or undercook something and there's just no margin of error.

Also most people consider slow cooked beans to have a better texture, and I would agree with those people.

I never have overcooking problems but you can always bring your food up to speed under pressure, undercook it in the pressure cooker and finish it using conventional means in about 10 minutes.

I use my pressure cooker a few times a week. Great for making unsoaked dry beans into food in just over half an hour. Great for banging out a long simmering dish on a Tuesday night. Great for making Chinese red cooked pork, or having a huge pot of borscht in under an hour.

I put off getting one for years, but I really happy I finally got one.

Pro tip: You can use a pressure cooker to sterilize bird seed, or other grains. With this, you can innoculate with fungal spores and grow your own mushrooms. Invitro or otherwise.
Oyster and Psilocybe Cubensis are the easiest by far. Oyster will grow on old coffee grinds and newspapers too. just need to sterilize in order to give the fungus a fighting chance.

That's why I bought my 22L pressure cooker about 2 decades ago. Now I just use it on occasion for large batch cooking.
