Vinegar based hot sauces are total shit because usually the vinegar is completely overpowering and destroyed the original flavor instead of enhancing it. Tabasco is the worst offender

any good recipes for hot sauce? I have an abundance of chili peppers, mostly thai peppers, or i believe 'birds eye' chilis and I'd like to make a 'tabasco' style and/or sriracha style sauce.

honestly i just throw a few dried ghost peppers in a bottle of franks red hot and blend it, then let it sit there for like a week

I like Tabasco a lot just because that's what I grew up with. I also like Sriracha. I've tried Cholula and Frank's and Tapatio but they didn't do much for me. That's not to say I don't like them, though. They each have their unique taste.

I remember once though I tried this super hot sauce called Insanity sauce and it was really spicy. Friends and I used it for a punishment when we lost a game and we had to put a drop on our tongues. We were all sucking on ice cubes that whole night. It was horrible. I don't even know how you are supposed to eat that with food. So much concentrated spicyness in one drop, how are you supposed to ration it out into all the bites you take?

Had another sauce at a japanese place. It was supposedly the hottest sauce in the world or something, came in a small bottle with a dropper. It actually tasted dangerous... as in it tasted more like chemicals than anything else. With sauces like that I think there is really no point. I don't really see how anyone could use it regularly without burning a hole in their stomach.
