Did you burn the eggs?

Because I make heu-bao dan, Chinese sunny side up eggs, deliciously crispy on the periphery and the yolk is thick and custardy in the middle. The whole thing should look slightly golden brown.

I'm going to assume you tried doing that, next time use canola, about 2-3 Tbs. per egg (yea that's a lot but it's what makes it delicious). Turn the burnet up to the highest heat, when the oil is almost at smoking point drop in your eggs, do not over crowd the pan. 45-60 seconds per side. Pour some soy sauce over it, and eat with a bowl of rice. The custardy-yolky delicious and soy sauce will make a delicious sauce for the plain white rice.
