Either make Moussaka out of it, or make Baba Ganoush out of it. I have eggplant a lot, but the way I like it is fried, then I take some pita bread (Levant kind), put it between a piece just a bit bigger than the eggplant slice and add some salt and lemon.

there is some arabic/berber/lebanese? dish called mousaka which is without pasta and contains chickpeas and eggplant in a spicy tomatosauce, tastes nice and is veggie with protein.

also try penne alla norma, a sicilian dish of tomato sauce, penne, fried aubergine and mozzarella. You can add hot peppers if you like spicy food.

Cut it in half, pick up a pot, cut some onions in cubes and some olive oil, let them brown, add tomatoes, salt and minced meat and some pepper. After that cooks, remove it from the stove and place the meat inside the eggplant halves and place them in the oven so that they get crispy.

I think I may have tried it. My grandmother makes a lot of Eggplant stuff, (She's Lebanese). Eggplant is always good with pita bread.

This? Yeah it's called Moussaka, it's different from the other stuff and its made like a stew I think. This is how my grandma makes it but I've never seen it made like that so I just call it Lebanese Moussaka. I had some last night, actually. It's pretty good, ate it with pita.

cut tomatoes in cubes, add salt, olive oil
cook rice, add olive oil, shoyu
mix, let it rest for 0,5 hr

Oh, and disregard anyone claiming that you should bake them in the oven because that makes'em taste like car tires.

Always simmer them in a pot for about 45 minutes with a bit of water. Always simmer them.
