Hi /ck/, it's my girlfriend and I's anniversary in 2 weeks time, and I want to cook her a fancy meal. I moved away several months ago and she doesn't know about my love of cooking, so I want to really surprise her. I'm looking for recipes to make a 3-5 course meal that will hopefully impress technically and physically. Her favourite meals are generally italian, seafood, and quite light foods, as well as having a sweet tooth for summer fruits and dark chocolate.

The menu I was planning on looked something like
>Bruschetta with Mozzarella, Sunblushed tomatoes and Parma Ham
>Mussels in a White wine sauce
>Salmon and Asparagus Tagliatelle
>Lemon Sorbet
>Chocolate and Rum Mousse and Strawberries

I'd love opinions on this, as well as any recipes or suggestions to change my menu! I'd also like to make as much of this from scratch as I can, so can you help me out?

I'd recommend including shrimp scampi, since it's generally Italian(ish), seafood, and light. But then again I like shrimp, so I might be biased.

Thank you, I'm interested in the best way to approach making 5 courses that are ready on time without me getting up every 20 minutes while we eat. The sorbet and mousse should be pretty easy but what about the others

Its more that I wanted to be able to bring them out hot one after the other and look pretty swish. So have her sit down and serve the Bruschetta, then maybe 5 minutes after she has finished bring out the Mussels/Shrimp, and so on
