Chilling coffee beans draws out the oils, which break down almost immediately. Functionally, it has the same effect on taste as pre-grinding beans (whether you grind a week's worth ahead of time or buy pre-ground), since both expose the oils inside the bean to the air and you lose most of the flavor. Plus there's the added risk of freezer burn.
