There is no such thing as artificial flavor that actually tastes like watermelon. It has never been perfected and most laboratories are happy to settle on the existing recipes. Enjoy your shit palate.

It's mostly because of the Water part of Watermelon, which makes its flavor not easily distinguished.
However you could say the same about Cucumber and Gatorade did pretty fucking good with that
