Stilton is my favorite cheese to eat just by itself, just a little bit.
Mozzarella is commendable though. Cheap and one of the easiest cheeses to make yourself. If I had a source for good raw milk I would try.

American cheese does not equal Cheez Whiz and Kraft singles. Real American cheese can be great in the right applications. The good stuff is sold in large loaves and is sliced for you at a deli. It can either be white or yellow. The real stuff has more in common than Cheddar cheese than the Kraft shit people keep buying. It's by no means anywhere near the best cheese but the hate is unwarrented. Its perfectly acceptable for cheeseburgers, grilled cheese, mac and cheese, chili cheese dogs, sandwiches, and other assorted fares.

For me the worst cheese is Brie. I've tried it several times, different types. I've not liked any of them. Low flavor, and the rind tastes horrid.

One of the more interesting cheeses I had was a brie infused with Grand Marnier. It tasted like a creamsicle.

My favorite cheeses are soft cheeses (brie, herbed goat) and blue cheeses (roquefort, gorgonzola)

My favorite grilled cheese has herbed goat and cream cheese on it, with 3 other cheeses (I forget exactly, but I think 2 hard cheeses and another soft) tomatoes and bacon on grilled sourdough.
