It is a very small chain with a centrally located commisary that makes the chili. It is not canned. Refrigerated in tubs and distributed couple times a week. Not that it matters, but they do can some of it and have "frozen dinners" to sell locally. The frozen ones are close to the taste, the canned is a bit off. The one thing impossible (in my experience) to match is that cheese. I'm still curious how in the fuck they keep it so fluffy. Cheese is heavy, so it would naturally settle and clump. This stuff is like cotton candy made of cheese action. I suspect they are grating it with some sort of propriety, patented, newfangled contraption in the back room. I want one.

I think the place is ingenious.

Very simple food - keeps cost and complexity down

Small menu - no inventory waste

Options are limited - the Subway/Chipotely "nit picking because your taste buds are faggots while 30 people queue up behind you is for chumps. 3, 4, or 5... Or a coney?... Now move your ass. Next!

The cashier post (inclosed island in the middle of the dining room) is also the kitchen. One chic rings up your order, another guy 3' away uses one of two tools - ladle or tongs - to make your food in minimal time. The "kitchen" is literally about the same size as the foyer in my house. 2 people can do mad volume of business without breaking a sweat or getting cranky.

Funny thing, I live in europoorland, and I bought myself a pack of that "Authentic american cheddar". The melty, gloopy, thick-sliced yellow stuff like in the images. A packet of 8 slices to put on burgers.

I'm from Cincinnati, so I fucking miss cheese coneys living elsewhere now.

That said, it's nice that Kroger is a cincinnati-based company, so I can go into a Kroger where I am now and still get some Skyline chili...even though I prefer Gold Star.

Also, here's a recipe for people who've never had Cincinnati chili and have access to a Kroger.

Cincinnati Chili Dip

1. Take Cream Cheese, spread even on bottom of pyrex glass.

2. Take Cincinnati Chili, put over cream cheese.

3. Put cheddar cheese on top of Cincinnati Chili.

Throw in pre-heated 350 degree oven for 15-20 minutes.

Take favorite chip (I recommend Tostito's Scoops) and eat that fucking delicious chip dip.
