Most diners are oblivious to the use of jaccard tenderizers. These are unlike the brutal household meat mallets you may be familiar with. Food experts such as Nathan Myhrvold have proclaimed jaccard tenderized meat to be superior to untreated and traditionally tenderized meat with none of the traditional disadvantages. It is almost impossible to distinguish jaccard tenderized meat from meat which is naturally tender and delicious. Due to its subtle yet beneficial effects, the use of jaccard tenderizers has become nearly universal at steak houses.

OP - a tenderizer like this is used for chicken fried steak and low cuts, but in any real cut of steak it's immediately noticeable. It's not subtle, so I can't see how any steakhouse would be using it.
