Pork lard is even worse for your health, but it makes everything delicious.

Different breed of hog. One is for cooking and fat. Another is for pig's leather and sausages. The meat from the leaner leather hogs is ground with the fat from the cooking hogs to make sausage. The meat from cooking hogs is sold in groceries for roasts and chops.
No one would use mangalica hogs, for example, for making leather. It'd be a waste of their fatty skins.

Soft biltong, where the fat has just gone yellow and see through, and is still soft to the chew, is better.

Sure, the same way too much water is bad for your health.

Why would you deep fry pork scratchings? You need to roast them.

Too much water is indeed bad for your health. Hyponatræmia, a deficiency in dietary sodium, can occur when the sodium is flushed from the body in the urine by excessive water consumption. In less severe incidences, hyponatræmia manifests itself merely in headache, cognitive difficulties and lethargy/fatigue but in extreme cases can result in cramps/muscle weakness, seizure, coma, brain damage and death.
Cells in the brain absorb the excess water, causing swelling. As the brain swells against the sides of the interior of the skull, it can get damaged, leading to the neurological symptoms as described above in extreme cases of hyponatræmia.

That's not to mention fucking drowning, too.

Don't forget that the body needs ions in solution to carry the electric signals and whatnot (very high, please excuse poor scientific explanation)
