yes there are tongue tacos, and carne asada of every cut of beef, but we usually stop when you can't really mince it further with a knife.
so ground beef is mostly too dry and not common at all, and seen as cheap laborer food.

I think that's the problem, in mexico we see ground beef as 2 things, cheap meat just slightly above trimmings for a dog, and burgers, so probably it clashes in the minds of many people.

now what is really not a taco is the hard shells and salad covered in yellow cheese you eat at taco bell, that is not recognizable as a taco to any mexican. If you called it a bent tostada, that would be acceptable.

Here in mexico some people don't like it or actually disdain it, especially in the south like chiapas, they call it corn-shit and thow it away.

It's more appreciated in the center of the country and there is even an expression that says "toda milpa tiene su huitlacoche" which means every place has it's good things, because it was expensive.

Now it is not so, It can be cultivated and actually my father's colleagues, and some professors developed the techniques by which it's inoculated in to corn now, two of the professors are gringos by the way.

Personally I rather like it, also just FYI the phyllophaga larvae, of which there are many in the corn fields are edible and taste great roasted on the skillet, just rip their heads out while squeezing them lightly and all the digestive tract comes out.

Even when fresh, whenever I have homemade tortillas at my friend's house, they're moist (as if they had been steamed) and slightly thicker than a storebought tortilla. If you tried to fold it in half, for instance, it would tear. They're decent eating, but I find storebought ones to be much more... stable, I guess?

Mexican American here

I eat "Tex-Mex" when I'm high/drunk/lazy or want something 'American' that vaguely resembles my cuisine.

I don't necessarily think ill of Tex-Mex, it's just that I don't consider it Mexican at all. It's American food in my eyes.

A traditional Mexican taco is made with Flank or Skirt steak, not ground/minced. It's served on a freshly made whole grain yellow corn tortilla and topped with finely diced onion, cilantro, and molcajete salsa.

For comparison an American 'taco' is ground beef in a industrialized/processed hard shell corn tortilla with iceberg lettuce, diced tomato, cheddar or processed american cheese, and sour cream - salsa is optional from what I've seen.

It's a completely different texture, flavor profile, and quality of ingredients.

The funny thing is, even the "Mexican taco" you define here is actually Tex Mex. Both the burrito and the taco are Tex Mex, American inventions using Mexican ingredients. Mexican food tends to be eaten with a giant bowl of the ingredients in the center of a table and everyone grabs finger fulls of it with pieces of tortillas from where they sit.

The "taco" was an Amerifat invention made for portability.

I've had authentic Mexican plenty of times, I lived with Mexicans for 5 years with my ex.
They also claim to love the boring ass soft corn tortillas but always eat all the flour, because flour tortillas fucking taste better.
They also taste amazing made from scratch by a little Mexican grandma.
Equivalent Mexican dishes to "tex mex" are harsher on the stomach and always give me some sort of horrible tomato related reflux, all of the authentic restaurants end up knocking me out with greasy stomach pain half way through the plate, I can eat boat loads of the "fake" stuff.
I've had some of the worst incidents of food poisoning from real Mexican and fuck cilantro.
