My favorite vegetable side dish is sauteed cabbage. Its good in egg rolls. Cabbage soup. Shchi is god tier, pic related.

Oh yea, egg rolls and stir fries. I was tempted to pick onions as my favorite vegetable but they are more for flavor enhancement, you can't really get full on them. Cabbage though, best veggie. Tastes good, versatile, so cheap its almost free, nutrient dense as fuck, very filling, can make up a large portion of your dinner and diet. Potatoes are like that too but they aren't as good for you, too starchy and not so many vitamins.

Cabbage is food of Gods. Someday I wish to distill cabbage into alcohol.

Mushrooms are indeed a fungus, but commercially and legally, they are classified as vegetables for trade and tax purposes. The same sort of classification is true for tomatoes; botanically, they're fruits, but for legal and commercial purposes they're classified as vegetables.
