So I have this recipe for chewy chocolate-chip cookies.
And it calls for bread flour. (More protein -> more gluten -> chewy)
Anyway, thing is, stores near me suck and I can't find any bread flour. Only bread mixes, that already have yeast in them and such nonsense, the "Only add water" stuff.

I read you could substitute bread flour for a mix of 60% AP flour and 40% whole-wheat flour.
Is this true coo/ck/s?
If not, any tips/help?

Can you buy vital wheat gluten? Just a few grams of that is enough to suitably boost the protein content if you've only got AP flour.

I have AP flour and bought some whole-wheat flour. I doubt they'd have vital wheat gluten if they don't even have bread flour.
Though if you say the 60/40 AP and whole-wheat thing doesn't work I could go check.

Have you checked supermarkets in your area thoroughly? If you're in the US, I can't imagine you not having at least one Super Walmart around. They would always have it. Any supermarket at all, actually.

I have checked thoroughly, and no, I'm not in the US.
The only real flour they had in the supermarket were AP flour, whole-wheat flour, self-raising flour.
The rest were all pre-made mixes, mostly of the "only add water" variety. (Bread, brownies, cake etc.)

Whole wheat flour has more fibre, not protein. It also has more fat. You need to buy gluten. Vital wheat gluten, to be precise. You can find it for sale in stores catering to two groups of people: health nuts and vegans/vegetarians.

Fun fact: I bake my biscuits/cookies with bread flour for dat chew. I use AP mostly for roux-making, pancakes/crêpes, scones/American southern biscuits and soda bread.

Maybe for the purposes of a cookie recipe. That's definitely not what bread flour is, not at all.

You should substitute 100% whole wheat flour if you're just looking for some chew and don't mind the flavor/color

for soft/chewiness, making sure not to overcook the cookies is more important than the flour

Of course not overcooking is important. But you shouldn't overcook anything.
Using bread flour (more gluten & holds more moisture), and brown sugar (mollases keeps cookie moist), will make a chewier cookie than making one without them.

Couldn't you just try mixing the dough for a long time, and develop the gluten better? (being careful not to overheat it, lest you melt the butter) Surely that would help.
