They dry easy - if you're grinding your own brine the meat first. Add some fat as well if you can - duck fat in a turkey burger will send you to heaven.

If I don't have duck fat what else could I use?

>> No.4482563

roll in thyme, salt, rosemary, oregano, celery salt, black pepper, and cayenne pepper into the burgers

form patties (not balls, if they are too thick you will have to cook them for too long to have them cooked thoroughly) and add to an oiled pan

cook until cooked thoroughly through

top with guacamole and lettuce

for the guacamole I just use a simple guacamole of avocado, red onions, pepper, and lime juice

this is absolutely true
and if you don't have duck fat, any fat trimmed from another meat and then ground up will work

and the difference between a good turkey burger and a bad turkey burger really comes down to whether or not you overcooked it

When will I know it's over cooked?

when it's dry

You could, hypothetically, have a dummy burger for yourself if you're cooking for multiple people, to cut open and gauge the doneness.

Or you could use a meat thermometer. I don't remember turkey's temperature but you could google it.

And adding more fat to the equation gives you a lot of leeway to making sure it doesn't overcook.

Thanks for all your help /ck/ You guys are pretty rad.

1. discard ground turkey (place into sealed trashcan to ensure that raccoons & bears don't release any of the vile stuff into the ether)
2. go to local supermarket
3. pick up 80/20 ground chuck
4. dice 2 cloves garlic
5. work diced garlic, some s&p into the ground chuck
6. shape into burgers
7. grill away from flame, turning, until desired doneness achieved
8. top with onion, mustard, pickle, and mayonnaise (you can do 2 toppings on top of the patty and 2 on bottom, or 3 on top 1 on bottom -- just play around with it until you find a good configuration, post results!)
