Well if you think about it, being able to get decent guac and carnitas at a chain joint is kinda impressive. Especially for those not lucky enough to live near a Mexican neighborhood.

It's easy to make good guac at home, but people fuck it up regardless. I live in the northeast, and dumbfucks here put shit like mayo or sour cream in it because they don't know any better! Thank god I live in a Mexican neighborhood.

As for braising, I only know a few folks who do it at home - it's become something of a lost art as far as home cooking is concerned.

I know what you mean. I went through that period of my life. My mom had it as a side every dinner from conception to my departure into my own place. After about a couple of years off, it was game on. I love it at Thanksgiving, the combination of it and gravy on the plate...awesome.
