If only I had friends or family to feed.. sigh...

Not OP, but I've been wondering: how do most people make theirs?
Me? I peel and slice green apples, soaking them in acidulated water until the whol batch is done.
Next, I drain them from the water and allow to drip dry a short while.
Put'em in a bowl and toss them with enough sugar until they're well-coated, adding a little powdered agar, as well.
Sauté apples briefly in butter until caramel coloured.
Place into a pastry crust, storebought or homemade ('pasta frolla' type, but I CBA to translate it into English for you).
Add the top crust and egg wash it, then sprinkle with sugar.
Bake at 175°C/350°F until GBD and innards are heated through.

I know Americans add spices to their apple pies, but I was wondering if the process, other than the addition of spices, is the same.

I use 50/50 pink lady and granny smith apples, cored, peeled, thinly sliced, and cook them in a saucepan with some orange juice and plenty of spices until they're tender. Then I drain, add a bit of sugar, pastry crust, brush the top crust with some of the remaining orange juice (now with delicious apple cider flavours) and top with a sprinkling of cinnamon.
