Scrambled eggs over chapatis for lunch (put pepitas in the dough, was delicious)

For dinner... eh, I'm feeling totally lazy, so I will probably make more oatmeal but load it up with diced apple and cashews.

steak, salad, and shrooms. Steak was good, a bit undercooked so I put it into the oven for a bit.

Shrooms were horrible. Literally the worst I've ever tasted, but I'm blaming walmart, since that's where they're from.

Salad was decent, if unimaginative.

For breakfast I had oatmeal with cinnamon and brown sugar with a banana on the side.

During morning break I realized I forgot to bring bread so I had 2 apples and a slice of cake because it was a co-workers birthday.

For lunch I had yesterday's leftovers: pasta with tuna and pesto.

For dinner I made chili from canned diced tomatoes, corn and kidney beans, ground beef, fresh onion and lots of chili powder. served on a bed of 2 crushed taco shells.

Tonight after my workout I will have plain quark with ginger jam.

Leftovers are tomorrow's lunch.

Boiled some pasta then threw in some sardines that I pre-sauteed on the side at rhe same time.

Tomato & red onion salad - It's a salad even though there's no greens!

recipe:
4 roma tomatos
1 red onion
dash of salt
dash of oregano
dash of pepper
olive oil
red wine vinegar

combine and eat immediately, or let sit refridgerated for a day to let the flavors mingle.


Inb4 too much dressing: the leftover in the bottom becomes flavored by the tomatoes and red onion and makes for an excellent salad dressing.

since i had it typed out for someone else from fb, here

about 1/2 - 2/3 standard can of coconut milk
1/2 medium onion
1/4 red bell pepper
1/4 can chili beans + liquid (red kidney beans in jalapeno spices)
leaves from 3 sprigs of thai basil
handful of parsely sprigs
1/2 green squash (zucchini) peeled
2 filets frozen tilapia
6-8 large shrimp (frozen as well)
2-3 tsp of curry powder - depends on the heat. start low and add more to taste
1/2 tsp paprika
1/4 cup fish or chicken broth
habanero hot sauce (season as needed)
1/4 - 1/2 tsp salt
1/4 tsp cumin

julienne the pepper, dice up the onions and squash, finely mince the basil and thai (pro tip: roll the leaves up into a bunch).

add all ingredients into slow cooker for 3-4 hours (start on high setting, drop to low and put back up to high again before you heat it so it's nice and hot). sift a thin layer of flour or corn starch to thicken. I used somewhere under 1/4 cup of flour, perhaps 1/6th?

serve over rice
