I only use vegetable stock.
I prefer to make it myself but the low sodium sprouts brand one is good too.

No way. Vegetable stock is king for soups. I used to always use chicken and beef stock, then tried vegetable stock once and have never looked back.

Hell no. Veg stock contains no gelatin, which means it fails in the texture department. That being said, store-bought canned broth usually doesn't either, but neither are a subsititue for properly made meat-based stocks. A good stock should set up like jello due to the gelatin content. That's key for texture & mouthfeel.
