I love po-boys. My favorite is the hot roast beef from a local po-boy shop. The fried chicken one is also good.

No. >>4350255 has it perfectly right. The bread is a lot of what makes the po'boy a good sandwich. If you look at google images for pictures of po'boys, you'll notice a consistency in the bread. Similar to muffalettas, if you fuck up the bread, I'm not buying a po'boy from you again.
When I lived near D.C., a few 'New Orleans' joints opened up - only one used that type of bread which it had flown from New Orleans to D.C., which I learned after the fact. Guess which restaurant was the best by a mile. I guess you can argue that if the owner was willing to pay attention to small things like the bread, they were more likely to make a good sandwich, but honestly, anyone who's had po'boys can tell in a second if the bread is right or not.
