Why does food taste better warm? (obvious exceptions excluded)

>> No.4332592

More heat = volatile compounds that comprise the smell/aroma of the food evaporate more = more flavor.

Why does beef taste just as good cold as it does warm?

this. It's all basic chemistry.

from an evolution stand point, food that is cooked has more digestable nutrients and protein. so humans that liked the taste of cooked foods, cooked their foods and had better nutrition because of it. this likely led to them fairing better and reproducing more.. and now everyone likes cooked food better than raw.

you guys are answering why food tastes better WARM.

This guy is answering why food TASTES BETTER warm.

You taste warm food more than you do cold food because warm food has more energy = increased number of particle collisions in your mouth and nose? At least that's what I always thought.

You have an odd Lamarckian view of evolution.

how is it odd to think that the members of a society that get better nutrition than another segment of society would not live better and reproduce more?

also, besides nutrition, raw foods can carry more diseases than cooked foods... this leads to the eaters of cooked foods having another advantage over raw food eaters.

Bill Nye here!
Molecules of all kinds move faster when they are warm.

Warm food flavor molecules bounce around in your mouth and hit more taste buds than cold ones do.

it's all psychological. The real factors are air quality and hunger. Even above those factors are your ability to project enjoyment, which, as I have stated, highly facilitated by hunger. The brain has a mind of its own.

>tl;dr I have enjoyed the fuck out of cold food that should really have been heated. Lingering over the tastes and shit more than I would have if it was heated

No, it really isn't.

yes and no... when sugars and proteins carmelize, and when gluten and other starches "bloom" they actually change chemical composition and taste different... (usually better)

this is why we like toasted bread instead of unbaked dough.

has nothing to do with temperature at time of eating.

It's not about cooked VS raw, it's about hot vs cold. Warm bread taster better than cold bread.

Caramelization of sugars. Humans like this taste.

>> No.4332788

>>4332784
Are you saying caramelization is reversible and sugars revert back once the bread cools down?

>> No.4332795

>>4332788
Yes, that is exactly what I am saying.

How do you not understand the concept of volatilization and how it relates to our senses?

Fried meats taste better cold. Leftover wings, takeout, fried chicken, tacos, fish fry. I usually get enough for 2 meals since I end up enjoying the second more. Maybe i'm weird though.

Because more time in contact with tongue.

When food is hot, you tend to chew quickly so as to swallow it and not burn your tongue. When food is cold, the chemical reactions that trigger "taste" are lengthier to achieve, and more difficult.
